Remember last week when I wanted to make a pizza but didn’t have the desired toppings? Well this week, in addition to my desired appetite for a pizza, I also had the toppings that I like on a pizza. So, a basic pizza crust it is this week. The recipe can be found on page 64 in the first edition of The Joy of Gluten-Free, Sugar-Free Baking.
Let me tell you, that whenever I come across a recipe that requires dough to be made up from scratch, I normally pass it up. I have it in my head that making dough is a long drawn out difficult process. I don’t know why. I don’t know where it came from.
But this pizza “dough” is super easy and quick to make. I felt confident in putting it all together. Easy peasy!
It is no secret that I’ve fallen off the wagon with my healthy eating habits. It’s nothing horrible. During the week I do fairly well but the weekends I lose it, mostly. Again, it’s nothing horrendous but still. This weekend, though, especially today (Sunday), I ate great and thanks to this gluten-free/sugar-free pizza crust I am feeling pretty good right now!
